2009 Cabernet Sauvignon

Notes

Dark garnet color exuding aromas of dried sage, sandalwood, fire roasted Ortega chiles, and blackberry cobbler. These flavors are classic Cabernet Sauvignon with dark currant, blackberry, fresh cranberry, and espresso bean. The finish shows more dried dark fruit with sage, clove, cedar, white pepper, and dried cherry studded in dark chocolate bark.

This is a big Cabernet with character from some of the best appellations in California. Our 2009 Cabernet is mostly from Paso Robles and Clarksburg. The Paso Robles leg brings classic Cab nuances to the blend with the currant, cranberry fruit, as well as earthy tones. The Clarksburg leg brings mouth coating tannins and chocolate notes. Lodi Syrah was added for additional fruit and subtle herb flavors, as well as to tone down the chewy tannins. Napa Merlot was added for complexity and complementary notes to the Cabernet as they do in classic Bordeaux blends.

Pairings

This is definitely a red meat Cabernet Sauvignon, the thicker and more marbled the cut, the better. Serve with BBQ’d ribeye, porterhouse, or top sirloin with all the fixings – baked beans, coleslaw & cornbread. Other good pairings would be with a pizza topped with creamy blue cheese and smoked onions; or spaghetti Bolognese with grilled sausages.
