2011 Cabernet Sauvignon

Winemaker Blend Notes

In the glass you see dark garnet color with aromas of molasses, tart cherry, dried sage, savory dill, and black raspberry. The flavors are classic Cabernet with red currants, black cherry, Dutch Cocoa, pomegranite, herb de provence, and finishes with sweet blackberry and sandlewood. There is a lot going on in this glass. It just continues to open up with a little time and swirling in my glass. It goes from fruity to chocolaty to savory to oaky and then goes back to the beginning and finishes with gobs of fruit.

Food Pairings

This blend would go very well with Prime Rib with Vichyssoise purée, baked fingerling potatoes, mushroom fricassée, cipollini onions, bordelaise sauce, horseradish crème friache all topped off with fresh pepper.
